Allo Bhoji Recipe
- 1/2 tsp Grnd cumin
- 1/2 tsp Grnd coriander
- 1/4 tsp Grnd turmeric
- 1/4 tsp Mango pwdr
- 2 Tbsp. Vegetable oil
- 2 tsp Finely minced fresh ginger
- 2 x Fresh red or possibly green chilies, finely minced
- 1 tsp Black mustard seeds
- 1 tsp Cumin seeds
- 1 lrg Sprig fresh curry leaves or possibly 6-8 dry curry leaves Salt
- 4 x Potatoes, diced
- 1 c. Water
- 4 lrg Tomatoes, finely minced Place grnd cumin, coriander, turmeric and mango pwdr
- In a small bowl and mix to combine.
- Set aside.
- Heat oil in a heavy-based saucepan, add in ginger, chilies, mustard seed, cumin seeds, curry leaves and salt to taste, and cook over low heat, stirring for 2 min.
- Add in potatoes, mix well and cook for 10 min.
- Add in water and cook, stirring occasionally, for 10 min or possibly till potatoes are almost cooked.
- Add in tomatoes and cook, stirring occasionally, for 10 min or possibly till tomatoes are pulpy.
- Stir in spice mix and cook for 2 min longer.
- Serves 6ALLO BHOJI
