Sweet Potato Minestrone
- 1/2 lb. smoked turkey sausage, cut into 1/4-inch slices
- 1 cup onion, diced
- 1 cup carrot, diced
- 3/4 cup celery, thinly sliced
- 3 cups fat-free chicken broth
- water
- 2 cups sweet potatoes, diced and peeled
- 1 tsp. dried oregano
- 1/2 tsp. coarsely ground black pepper
- 1/4 tsp. salt
- 2 (14 oz. each) tomatoes, unsalted, undrained, and coarsely chopped
- 1 can (14 oz.) Great Northern beans, rinsed and drained
- 2 bunches fresh spinach, coarsely chopped
- Combine first 4 ingredients in a Dutch oven over medium-high heat; saute 7 minutes or until sausage is browned.
- Add chicken broth (or water) and next 6 ingredients (water through beans).
- Bring to a boil, cover, reduce heat, and simmer 30 minutes or until vegetables are tender.
- Stir in spinach, cook an additional 2 minutes.
- Serve.
