Chicken Spice Rub

• 1 tsp Five spice powder
• 1 tsp Salt
• 1 1/2 tsp Freshly ground five pepper mix
• 1 tsp Roasted and ground Sichuan peppercorns
• 1 tsp Madras curry powder
• 1 tsp Ground cumin
• 1 tsp Dried thyme

1. Mix ingredients together and use as a spice rub on chicken.
2. For a whole roast chicken, make approximately 4x the quantities.
