Portuguese Bean Soup Recipe

  1. Soak beans overnight in 1 qt water and 1 tsp.
  2. salt.
  3. Drain.
  4. Add in remaining ingredients except sausage and cabbage with 8 c. water.
  5. Simmer partially covered 4 to 5 hrs adding water if need.
  6. Add in sausage and cabbage.
  7. Simmer 30 min.
  8. Remove ham hock and soup bone, pick off meat and return to soup.
  9. Serves 10.
