Welsh Rabbit With Beer Recipe
- 1 tbsp. butter
- 1 pound sharp cheddar cheese, grated
- 3/4 c. beer, divided
- Dash of cayenne pepper or possibly Tabasco sauce
- 1 teaspoon dry mustard
- 1/2 teaspoon salt
- 1/2 teaspoon Worcestershire sauce
- 1 egg, slightly beaten
- 1 teaspoon cornstarch
- Heat the butter in the top of a double boiler.
- Add in the cheese and all but 1 Tbsp.
- of beer.
- Cook over warm, not boiling water till the cheese melts.
- Combine the seasonings with the remaining Tbsp.
- of beer and stir into the cheese.
- Combine the slightly beaten egg with the cornstarch; stir into the cheese mix and let it thicken slightly.
- Serve immediately over toast or possibly broiled tomato halves.
- 4 servings.
