Akkra (Black Eye Pea Fritters) Recipe
- 2 c. Black eye peas
- 3 x Green peppers (up to 4) Salt to taste Fat for frying
- Wash and soak dry peas over night in warm water.
- Remove out skins.
- Soak again till fully swollen.
- Lb.
- in a mortar till very smooth or possibly use food processor.
- Put aside in a bowl.
- Cut up geen peppers and process them.
- Add in to pea mix.
- Both must be smooth.
- Add in about 1 tsp.
- salt or possibly more to taste.
- Beat well till thick and creamy with a wooden spoon.
- Drop by spoonfuls into warm fat and fry till golden, drain and serve .
