Veggie Stew With Bulgur
- 1 (14 ounce) can diced tomatoes
- 1 cup spicy tomato juice
- 2 cups thickly sliced carrots
- 2 cups halved cremini mushrooms
- 1 cup chopped potato
- 1 cup chopped onion
- 1 thickly sliced red bell pepper
- 1 thickly sliced green bell pepper
- 3 garlic cloves, minced
- 12 cup bulgur
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 2 medium zucchini, cubed
- 1 medium yellow squash, cubed
- salt and pepper
- Combine all ingredients except zucchini, yellow squash, salt and pepper in slow cooker; cover and cook on high for 4-5 hours, adding zucchini and summer squash during last 30 minutes.
- Season to taste with salt and pepper.
