Leprechaun Pies (In Phyllo)

  1. For added crispness, preheat oven to 350.
  2. Remove the shells from package.
  3. Place them on a cookie sheet, place them in the oven for 3-5 minutes.
  4. Allow to cool before filling.
  5. With and electric mixer, blend the softened cream cheese and marshmallow cream together for 1 minute.
  6. Add lime juice, peppermint extract and greed food coloring.
  7. Mix 1/2 to 1 whole minute.
  8. Refrigerate mixture for 30 minutes to chill.
  9. Fill each crisp shell with 2 teaspoons of filling.
  10. **If desired, garnish with:
  11. 1/3 cup semi-sweet chocolate chips, melted 2 minutes in microwave.
  12. whipped topping.
  13. semisweet or white baking squares, shaved.
