Asian Chicken Breasts and Rice With Cashews

  1. Preheat the oven to 350 degrees.
  2. In a medium bowl, whisk together the soy sauce, honey, mustard, and ginger.
  3. Arrange the chicken in a lightly sprayed or oiled 11 x 7 inch glass baking dish and pour the sauce over.
  4. Bake, uncovered, until the chicken is cooked through, about 30 minutes.
  5. Place the rice on a large platter and arrange the chicken on top.
  6. Pour the sauce over it and sprinkle with the cashews.
