Shanas Enchiladas
- 1 pound Ground Beef
- 1 whole White Onion, Chopped
- 1 can Green Chiles
- 2 cans Red Enchilada Sauce
- 1 package Small Corn Tortillas
- 4 cups Shredded Cheddar Cheese
- Preheat the oven to 350 degrees F.
- In a large skillet, cook the ground beef with the onions and green chiles (I only use a spoonful of the chiles, but you can use as much or little as you like).
- Drain the beef mixture and return to the pan.
- Add one can of the enchilada sauce and heat through.
- Pour a small amount of enchilada sauce into a 9x9 square pan.
- Pour the remaining sauce into a shallow bowl.
- Dip your corn tortillas into the sauce and layer as follows:
- Corn tortillas Ground beef mixture Shredded cheddar
- Repeat the layers (there should be two), top with another layer of tortillas, and top with another layer of cheese.
- (Alternatively you could leave off the extra layer of tortilla and cheese, depending on your tastes).
- Bake in the oven for about 2o-30 minutes, just until the cheese is melted and starting to brown.
- Allow to cool for about 5-10 minutes, and serve.
