Pico de Gallo
- 2 beefsteak tomatoes, cut into 1/2-inch pieces
- 1/2 white onion, finely chopped
- 1/2 to 1 serrano chile, minced
- 2 tablespoons fresh lime juice (from 2 to 3 limes)
- 1 tablespoon olive oil
- 2 tablespoons finely chopped cilantro
- Coarse salt
- Combine all ingredients in a nonreactive bowl, adding 1 teaspoon salt; let stand 5 minutes.
- Season with more salt to taste.
