Chive Potato Souffle Recipe
- 2 c. warm mashed potatoes
- 1/2 c. lowfat sour cream
- 3 tbsp. minced chives
- 1 1/2 tbsp. salt
- 3 Large eggs, separated
- Beat egg whites till stiff, but moist.
- Set aside.
- Beat yolks till smooth and add in to potato mix.
- Mix in beaten egg whites, lowfat sour cream, and chives, and pour into a buttered 1 1/2 qt casserole.
- Bake at 350 degrees for 45 min.
- Serves 4 to 6.
