Chive Potato Souffle Recipe

  1. Beat egg whites till stiff, but moist.
  2. Set aside.
  3. Beat yolks till smooth and add in to potato mix.
  4. Mix in beaten egg whites, lowfat sour cream, and chives, and pour into a buttered 1 1/2 qt casserole.
  5. Bake at 350 degrees for 45 min.
  6. Serves 4 to 6.
