Apple Cream Cheese Coffeecake Recipe

  1. Cream 1/2 c. brown sugar and butter at medium speed of an electric mixer till light and fluffy (about 5 min).
  2. Add in egg, and beat well.
  3. Add in egg whites and beat well.
  4. Combine yogurt and applesauce.
  5. Combine flour and next 3 ingredients; add in to creamed mix alternately with yogurt mix, beginning and ending with flour mix.
  6. Mix well after each addition.
  7. Reserve 1 c. batter, and set aside.
  8. Combine cream cheese and lowfat milk, stirring with a wire whisk till smooth.
  9. Pour remaining batter into a 9 inch square pan coated with cooking spray.
  10. Spoon cream cheese mix over batter.
  11. Top with 1 c. minced apple.
  12. Pour 1 c. remaining batter over apple; top with remaining 1/2 c. apple.
  13. Sprinkle with 1/4 c. brown sugar.
  14. Bake at 350 degrees for 55 min or possibly till a wooden pick inserted in center comes out clean.
  15. Cold in pan on a wire rack.
