Apple Cream Cheese Coffeecake Recipe
- 1/2 c. firmly packed brown sugar
- 1/4 c. butter softened
- 1 x egg
- 2 x egg whites
- 1/2 c. nonfat yogurt
- 1/2 c. unsweetened applesauce
- 1 3/4 c. flour
- 1/2 tsp baking pwdr
- 1/2 tsp baking soda
- 1/4 tsp salt
- 4 ounce nonfat cream cheese
- 1 1/2 Tbsp. 1% low-fat lowfat milk vegetable cooking spray
- 1 1/2 c. granny Smith apple peeled and minced
- 1/4 c. firmly packed brown sugar
- Cream 1/2 c. brown sugar and butter at medium speed of an electric mixer till light and fluffy (about 5 min).
- Add in egg, and beat well.
- Add in egg whites and beat well.
- Combine yogurt and applesauce.
- Combine flour and next 3 ingredients; add in to creamed mix alternately with yogurt mix, beginning and ending with flour mix.
- Mix well after each addition.
- Reserve 1 c. batter, and set aside.
- Combine cream cheese and lowfat milk, stirring with a wire whisk till smooth.
- Pour remaining batter into a 9 inch square pan coated with cooking spray.
- Spoon cream cheese mix over batter.
- Top with 1 c. minced apple.
- Pour 1 c. remaining batter over apple; top with remaining 1/2 c. apple.
- Sprinkle with 1/4 c. brown sugar.
- Bake at 350 degrees for 55 min or possibly till a wooden pick inserted in center comes out clean.
- Cold in pan on a wire rack.
