Caramelized Onion and Tomato Calzone

  1. In large nonstick skillet, heat oil over medium heat.
  2. Add onions, sugar and 1/4 cup water, and.
  3. cook, stirring frequently, until just beginning to color, about 12 minutes.
  4. Add 1/4 tsp.
  5. salt and 1/4 cup water, and cook, stirring frequently, until onions are sweet and deep brown, 30 minutes.
  6. Cool.
  7. Stir in basil and 1/4 tsp.
  8. freshly ground pepper.
  9. Preheat oven to 450F.
  10. Spray heavy baking sheet with cooking spray.
  11. Sprinkle work surface with a little flour.
  12. Place dough in center, and roll to coat with flour.
  13. Knead dough briefly.
  14. Divide dough into fourths, and roll each into a 6-inch round.
  15. Place 2 rounds on baking sheet.
  16. Evenly divide onion mixture, tomatoes and cheese between 2 rounds.
  17. Cover each with remaining 2 rounds.
  18. Pinch edges to seal.
  19. Brush tops lightly with water.
  20. Bake until golden, 15 to 18 minutes.
  21. Cool slightly before serving.
