Veggi Chili

  1. In a large pot, sautee onions in oil until transluscent.
  2. Add mushrooms, and sautee until softened.
  3. Add tomatoes, beans, corn, and spices.
  4. Simmer for one hour, minimum.
  5. Better if simmered up to 2 hrs (covered) on low heat.
