Chinese Chicken Salad Burgers

  1. Place all the ingredients for the burgers in a large bowl.
  2. Use your hands to mix the ingredients until just combined.
  3. (Yes, I know some of you dont love touching raw meat, but it will be over soon.)
  4. Form the chicken mixture into 4 equal patties.
  5. They will be pretty mushy/messy, but damp hands will help.
  6. Heat about 1 1/2 tablespoons of vegetable oil in a large non-stick pan.
  7. (There should be just enough oil to coat the bottom of the pan.)
  8. When hot, add the burgers and cook for about 7 minutes on each side until nicely browned and cooked through.
  9. Remove the burgers from the pan and let them rest for 5 minutes.
  10. While your burgers are cooking, youre going to make the salad.
  11. Place all the ingredients for the salad in a large bowl and toss to combine.
  12. (Easy!)
  13. Briefly set aside.
  14. In a small bowl combine all the ingredients for the dressing.
  15. When it comes to serving these bad boys, you have two options: 1.
  16. Serve burgers on lettuce/buns topped with salad and drizzle with dressing to taste.
  17. 2.
  18. Add half of the dressing to the salad and toss to coat.
  19. Top burgers with dressed salad and serve with extra dressing for dipping/drizzling.
  20. As always, you do you.
