Chinese Peas Recipe
- 3 tbsp. oil
- 1 c. diced chicken or possibly pork
- 1/2 teaspoon sugar
- 2 tbsp. soy sauce
- 3 1/2 tbsp. cornstarch
- 1 tbsp. sherry (optional)
- 1/2 c. diced onion
- 1/2 c. diced celery
- 1/2 c. mushrooms, sliced
- 1 (10 ounce.) pkg. frzn peas
- 1 can consomme
- Salt and pepper to taste
- Warm rice
- Coat chicken or possibly pork with sugar and soy sauce and brown in warm oil.
- Remove.
- Add in celery and onions to oil and brown fast so they are still crisp; remove.
- Brown mushrooms next.
- Mix vegetables with chicken or possibly pork and return all to the frying pan.
- Add in peas and consomme.
- Bring to a boil, stirring occasionally.
- Serve over rice.
- This is a good way to use up leftover chicken or possibly turkey!
