Cucumber Gazpacho
- 3 whole Cucumbers, Large
- 2 slices Bread
- 1 cup Green Grapes
- 5 cups Water, Plus More To Soak The Bread
- 3 cloves Garlic, Grated
- 1 Tablespoon Vinegar
- 4 Tablespoons Lemon Juice
- 1 bunch Fresh Coriander Leaves
- 1 Tablespoon Salt, Or To Taste
- 1.
- Peel and deseed cucumbers, then roughly chop them.
- 2.
- Soak bread slices in water (just enough to create a mash) for few minutes.
- 3.
- Blend cucumbers, grapes and bread mash.
- 4.
- Strain the puree.
- 5.
- Now add water, grated garlic, vinegar , lemon juice, coriander leaves and salt.
- 6.
- Refrigerate for at least 1/2 hour.
- 7.
- Serve chilled.
