Lighter Home Fries

  1. In an appropriate dish covered tightly with plastic wrap, microwave potatoes on high 4-7 minutes, shaking once halfway through.
  2. Potatoes should be cooked but not mushy.
  3. Cool and refrigerate.
  4. Meanwhile, thinly slice onion into half-rings.
  5. Thinly slice pepper, then cut strips in half.
  6. Melt 1/2 tbsp butter in a non-stick or cast iron skillet over medium heat.
  7. Add onions and peppers and saute 1 minute.
  8. Cover pan tightly and cook 6-8 minutes, stirring occasionally.
  9. Transfer vegetables to a bowl.
  10. Turn heat up to medium-high.
  11. Add remaining butter.
  12. When melted, add potatoes and steak seasoning.
  13. Cook 10 minutes, stirring 3 or 4 times.
  14. When potatoes have a nice brown crust, add onions and peppers and cook until hot.
  15. Add salt and pepper to taste.
