Lemon Meringue Pie

  1. In a large saucepan, combine 1 cup of the sugar, cornstarch, and salt.
  2. Gradually stir in water.
  3. Stir in egg yolks, beaten, then add butter and lemonade.
  4. Cook over medium heat, stirring constantly, until mixture reaches a boil.
  5. Boil for 1 minute more.
  6. Let cool.
  7. Preheat over to 400F.
  8. In a medium bowl, whip egg whites until frothy.
  9. Gradually beat in cream of tartar and remaining 1/2 cup sugar.
  10. Whip until stiff peaks form.
  11. Spoon cooled lemon filling into pie shell.
  12. Cover filling with egg-white mixture and spread to edges of pie shell.
  13. Place in oven 8-10 minutes until light golden brown.
