Not Your Grandma's Three Bean Salad

  1. Whisk together olive oil, lemon juice, tomato paste, malt vinegar and chopped chives.
  2. Set aside.
  3. Combine the three kinds of beans with the dressing.
  4. Add tomatoes, green onions and feta cheese to the mixture, tossing gently to thoroughly coat.
  5. Season to taste with salt and black pepper.
  6. Arrange salad on plates and garnish with fresh chives.
