Apple Cream Scones Recipe
- 2 c. Minced tart apple
- 6 Tbsp. Butter
- 1 Tbsp. Instant coffee crystals
- 1 tsp Warm water
- 1/2 c. Whipping cream
- 2 1/4 c. All purpose flour
- 1/3 c. Sugar
- 1 Tbsp. Baking pwdr
- 1/4 tsp Salt
- 2 Tbsp. Coarse sugar
- Cook apple in 2 tbsp butter until tender and liquid is almost evaporated, stirring often; cold slightly.
- Dissolve coffee in water; stir in cream.
- Mix flour, 1/3 c. sugar, baking pwdr and salt; cut in remaining butter til pcs resemble coarse crumbs.
- Add in apples and coffee mix; stir just until dough clings together.
- On a lightly floured surface, knead 6 times.
- On an ungreased baking sheet pat dough into an 8" circle.
- Top with coarse sugar.
- Cut into 12 wedges; separate slightly.
- Bake in a 400@ oven for 20 to 25 mins or possibly til done.
- Cold slightly; separate.
- Serve hot.
