Beer, Ham & Cheese Bisque

  1. Boil first 11 ingredients in a large stock pot.
  2. (Parsnips, Leeks, Celery, Onion, Garlic, Bacon Fat, Ham Stock, Beer, Red pepper flakes, salt, pepper & liquid smoke)
  3. Boil/simmer covered until all ingredients are VERY tender & broken down..
  4. Puree mixture in a food processor until smooth.
  5. Return to pot.
  6. Bring to a low simmer.
  7. Add Heavy Cream & mix with a whisk.
  8. Stir in shredded cheese & mix until cheese is melted on low temp.
  9. Be careful not to let bisque stick to pot!
  10. Place in serving bowls.
  11. Top each bowl with Bacon crumbles & Chives.
  12. (Optional)-Place a dollop of sour cream on the side of serving bowl if you wish.
