Beer, Ham & Cheese Bisque
- 6 Parsnips, peeled & cut into 2 inch pieces
- 6 Leeks, washed & cut into 2 inch pieces
- 2 ribs Celery, cut into 1 inch pieces
- 1 medium Onion, chopped
- 2 clove Garlic, minced
- 3 tbsp Bacon fat
- 6 cup Ham stock
- 1 1/2 tbsp Liquid Smoke, more or less per your taste
- 1 can Beer (non-citrus) Chicken or Beef broth can be used as a substitute.
- 1 Red Pepper flakes, to taste
- 1 Salt & White Pepper, to taste
- 1 cup Heavy cream
- 16 oz Shredded VELVEETA Cheese (it melts creamy instead of oily)
- 4 strips of Bacon, cooked crispy & crumbled
- 2 tbsp Chives
- 1 Sour cream, to taste (optional)
- Boil first 11 ingredients in a large stock pot.
- (Parsnips, Leeks, Celery, Onion, Garlic, Bacon Fat, Ham Stock, Beer, Red pepper flakes, salt, pepper & liquid smoke)
- Boil/simmer covered until all ingredients are VERY tender & broken down..
- Puree mixture in a food processor until smooth.
- Return to pot.
- Bring to a low simmer.
- Add Heavy Cream & mix with a whisk.
- Stir in shredded cheese & mix until cheese is melted on low temp.
- Be careful not to let bisque stick to pot!
- Place in serving bowls.
- Top each bowl with Bacon crumbles & Chives.
- (Optional)-Place a dollop of sour cream on the side of serving bowl if you wish.
