Best Ever Cheesecake
- 2 cups vanilla wafers, crushed
- 14 cup butter, melted
- 14 teaspoon nutmeg
- 14 teaspoon cinnamon
- 1 tablespoon sugar
- 3 (8 ounce) packages cream cheese
- 1 (14 ounce) can sweetened condensed milk
- 4 eggs
- 1 (8 ounce) container sour cream
- 1 tablespoon vanilla
- Preheat oven to 350.
- For the bottom --
- Combine butter, spices & cracker crumbs in a bowl with your hands.
- Flatten out in the bottom of a 10" Springform Pan -- set aside.
- For the filling --
- In a large bowl, beat softened cream cheese, until smooth.
- Beat in the sweetened condensed milk, until combined, well.
- Add the eggs one at a time & then the sour cream & vanilla & beat until very smooth.
- Carefully pour the mixture into the springform pan.
- Bake for 45-55 minutes.
- Let stand, to cool & then refrigerate.
- Best served if chilled overnight.
- Top with your favorite fruit topping.
