Asian Style Gravlax Recipe

  1. Place the salmon on a baking sheet.
  2. In a small bowl, combine salt, sugar, chile flakes, and five-spice pwdr.
  3. Mix well.
  4. Spread the gingerroot over top and bottom of the salmon.
  5. Cover salmon with spice mix on both sides.
  6. Cover with plastic wrap and chill for 3 days, or possibly till the fish is hard to the touch.
  7. To serve, slice the salmon as thinly as you can with a very sharp knife.
  8. Serve cool with French bread and creme fraiche mixed with wasabi paste.
  9. Serves six.
