Asparagus With Lemon Butter Recipe
- 2 lb (900 g) fresh asparagus, washed and trimmed
- 4 Tbsp. (60 ml) butter
- 2 Tbsp. (30 ml) lemon juice Salt and freshly grnd pepper to taste
- Steam the asparagus till tender but crisp, about 10 min, and plunge into cool water to stop the cooking and set the color.
- Heat the butter in a small saucepan and stir in the lemon juice, salt, and pepper.
- Refrigeratethe asparagus and pour the lemon butter over them prior to transporting.
- Serves 8 to 10.
