Artichoke Hearts, Roasted Bell Pepper and Fresh Mozzarella Pizza
- 1 each 100% Whole Wheat Pizza Dough, prepared (click to view recipe)
- 1 cup marinara sauce or tomato sauce
- 1 cup mozzarella cheese fresh, torn into pieces
- 1/2 cup artichoke hearts marinated, jared, sliced
- 1/2 cup mushrooms white button or cremini, sliced, optional
- 1/2 cup sweet red bell peppers, roasted slice into strips
- 4 cups arugula (roquette) baby
- 1/2 teaspoon olive oil, extra-virgin
- 1 teaspoon lemon juice
- 1 x salt and black pepper to taste
- Preheat the oven to 450F (230C).
- Roll the pizza dough into 12-inch circles or use prepared pizza crust.
- Spread the marinara sauce or tomato sauce over the pizza dough.
- Top with artichoke hearts, mushrooms and roasted bell peppers.
- Arrange half of the cheese between vegetables, and half the cheese on top.
- Bake for 10 to 12 minutes, or until the crust is golden and brown and the cheese melts.
- Cool for a few minutes, cut into wedges.
- Serve warm.
- Or in a bowl, mix together arugula, olive oil, lemon juice, salt and black pepper until well combined.
- Top slices with arugula.
