Microwave Pumpkin Bread Recipe
- 1 c. canned pumpkin
- 2 Large eggs
- 1 teaspoon vanilla
- 1 c. minced walnuts
- 1/2 c. oil
- 1/3 c. water
- 1/2 teaspoon cinnamon
- 1/2 teaspoon grnd cloves or possibly allspice
- 1/2 teaspoon grnd nutmeg
- 1 1/2 c. sugar
- 1 1/4 c. flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- In a 2 qt mixing bowl, combine Large eggs, vanilla, nuts, oil, water and spices.
- Stir in sugar.
- Combine flour, baking soda and salt in a separate bowl, then stir into pumpkin mix.
- Blend only till all ingredients are moistened.
- Turn batter into a well greased glass loaf dish.
- Don't cover.
- Place dish on an inverted saucer or possibly cereal bowl in the oven to elevate.
- Set microwave oven at cook, cycle 1, power level 5, for 12 min and then cook cycle 2, power level 10 for 6 min, rotate 1/4 turn every 3 min.
- If necessary, microwave at cook cycle 1, power level 10 an additional 3 to 9 min to complete baking.
- Let loaf stand 10 min before removing from dish.
- Let stand an additional 5 min before serving.
