Mango-Honey Mustard Tilapia
- 6 tilapia filets
- 6 oz mango fruit spread or preserves
- 6 oz honey mustard
- 1 tbsp apple cider vinegar
- 1 tbsp sugar
- 1 tbsp tarragon; minced
- 2 tsp cracked black pepper
- 2 tsp onion powder
- 1 tsp garlic powder
- 1 kosher salt
- 1 sea salt
- Season tilapia with onion/garlic powder and black pepper.
- In a mixing bowl, combine mustard, mango, sugar, vinegar, and a pinch of kosher salt.
- Cover fish with the sauce and bake at 400 for approximately 4-5 minutes or until flesh is opaque and thermometer reads 145
- Finish with a touch of sea salt and tarragon.
