Mango-Honey Mustard Tilapia

  1. Season tilapia with onion/garlic powder and black pepper.
  2. In a mixing bowl, combine mustard, mango, sugar, vinegar, and a pinch of kosher salt.
  3. Cover fish with the sauce and bake at 400 for approximately 4-5 minutes or until flesh is opaque and thermometer reads 145
  4. Finish with a touch of sea salt and tarragon.
