Artichoke Bisque
- 1 (14 oz.) can artichoke hearts, drained and divided
- 2 Tbsp. margarine
- 2 Tbsp. all-purpose flour
- 1/8 tsp. ground nutmeg
- dash of pepper
- 2 c. skim milk
- 1 c. water
- 1 tsp. chicken flavored bouillon granules
- 1 tsp. fresh lemon juice
- 4 twists fresh lemon
- Chop 2 artichoke hearts, set aside.
- Place remaining artichokes in food processor, puree.
- Set aside.
- Melt margarine in saucepan over low heat, add flour, nutmeg and pepper.
- Cook 1 minute, stir occasionally.
- Gradually add milk, water, bouillon granules and lemon juice, stir occasionally.
- Add reserved artichokes and pureed artichokes.
- Stir well.
- Cook over medium heat, stir occasionally for 10 minutes or until thickened and bubbly.
- Garnish each serving with a lemon twist.
