Khmer Curry

  1. Pour about 1 cup of the coconut milk, curry and shallots in a large saucepan over medium high heat and heat 10 minutes.
  2. Add meat and cook until sauce has thickened slightly.
  3. Add carrots and potatoes and cook another 5 minutes.
  4. Add the remaining coconut milk and cook until boiling.
  5. Add green beans and onions and simmer 20 minutes.
  6. Add salt to taste.
  7. Serve over brown rice.
