Khmer Curry
- 1 liter Coconut Milk, Divided
- 1 Tablespoon Curry Powder
- 100 grams Shallots, Chopped
- 500 grams Chicken
- 200 grams Carrots, Sliced
- 400 grams Potatoes, Chopped
- 100 grams Green Beans
- 200 grams Onions, Chopped
- 3/4 teaspoons Salt, Or To Taste
- Brown Rice, To Serve
- Pour about 1 cup of the coconut milk, curry and shallots in a large saucepan over medium high heat and heat 10 minutes.
- Add meat and cook until sauce has thickened slightly.
- Add carrots and potatoes and cook another 5 minutes.
- Add the remaining coconut milk and cook until boiling.
- Add green beans and onions and simmer 20 minutes.
- Add salt to taste.
- Serve over brown rice.
