Bubble and Squeak
- 4 medium potatoes ,cooked and mashed
- 1 medium onion, thinly sliced, lightly fried
- 8 oz cooked greens coarsely chopped (your choice) I use brussel sprouts
- pinch salt, pepper, nutmeg
- 2 tbsp oil (your choice) or bacon dripping
- Place potato in bowl add greens , onions and seasoning, mix together, don't overmix it will go sticky.
- Heat oil in frying pan or skillet over medium heat.
- Add potato mix and fry, turning and sirring as crust forms.
- Fry until heated through and golden on both sides.
- Serve .
- Good with cold roast meat or sausages.and lashings of gravy.
- You can make patties at step 3 instead of frying in one 'lump'
- Add chopped cooked bacon to mix for extra flavour.
- You can bake the potatoes (skin on) then scoop out the insides and mash them, this adds a whole different taste.
