Bubble and Squeak

  1. Place potato in bowl add greens , onions and seasoning, mix together, don't overmix it will go sticky.
  2. Heat oil in frying pan or skillet over medium heat.
  3. Add potato mix and fry, turning and sirring as crust forms.
  4. Fry until heated through and golden on both sides.
  5. Serve .
  6. Good with cold roast meat or sausages.and lashings of gravy.
  7. You can make patties at step 3 instead of frying in one 'lump'
  8. Add chopped cooked bacon to mix for extra flavour.
  9. You can bake the potatoes (skin on) then scoop out the insides and mash them, this adds a whole different taste.
