Marinated Beets

  1. cut off the beet greens.
  2. wash,but don't peel,the beets.
  3. place them in a pot,cover with water by 1 inch,& add the salt.
  4. bring to a boil and cook until tender,about 45 minuites to a hour.
  5. drain and,when cool enough to handle,slip off the skins.
  6. cut into slice about 1/2 inch thick.
  7. combine the remaing indgrediants & toss with the warm beets.
  8. serve warm or at room temperature.

beets, salt, wine vinegar, cilantro, ground coriander, extra virgin olive oil, garlic, ground black pepper, fresh chives
