Cheesy Turkey and Caramelized Onion Panini
- 1/2 tablespoon olive oil
- 1/2 tablespoon butter
- 2 large spanish onions thinly sliced or 2 large onions
- 2 cloves garlic or to taste, thinly sliced
- 1/4 teaspoon thyme dried
- 1 pinch salt and black pepper prefer freshly ground pepper
- 1 pinch sugar
- 2 1/4 teaspoons white wine vinegar
- 8 slices whole wheat bread or whole grain, butter one side
- 1 x prepared mustard sweet, as needed
- 24 ounces turkey cooked and sliced, 6 ounces per sandwich
- 4 slices swiss cheese
- In a large nonstick pan or skillet, heat both oil and butter over medium-low heat.
- Add onion slices, garlic, thyme, salt, pepper and sugar, cook and stir occasionally until onions are caramelized, 18 to 22 minutes.
- Stir in white wine vinegar.
- Spread unbuttered side of 4 of the slices with mustard.
- Top with onion mixture and 6 ounces each turkey and swiss cheese.
- Top with remaining bread, buttered side out.
- Grill in skillet over medium heat, or in panini press, until browned and cheese is melted.
- Serve warm.
