Amaranth Date Nut Bread

  1. Soak dates and amaranth in boiling water.
  2. Beat eggs well, add honey and butter; beat well.
  3. Stir in all remaining ingredients mixing well.
  4. Pour into an oiled loaf pan.
  5. Bake at 350F (180C) F for 1 hour and 15 minutes.
