Amaranth Date Nut Bread
- 1 cup dates chopped
- 1/2 cup amaranth flour
- 1 cup water boiling
- 2 large eggs
- 1/2 cup honey
- 1/4 cup butter melted
- 2 cups whole wheat flour
- 2 teaspoons baking powder
- 1 cup pecans chopped
- 1 teaspoon vanilla extract
- Soak dates and amaranth in boiling water.
- Beat eggs well, add honey and butter; beat well.
- Stir in all remaining ingredients mixing well.
- Pour into an oiled loaf pan.
- Bake at 350F (180C) F for 1 hour and 15 minutes.
