Sweet Spiced Pumpkin Bread
- 3 cups plain flour
- 2 teaspoons cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon mixed spice
- 12 teaspoon salt
- 1 teaspoon baking soda
- 12 teaspoon baking powder
- 2 cups sugar
- 210 g butter, partially melted
- 3 eggs
- 2 cups pumpkin puree
- 12 cup chopped walnuts

- Preheat oven to 180EsC and grease two loaf tins.

- Sift together the flour, spices, salt, carb soda, and baking powder and set aside.
- 3.
- Using the wire whisk attachment in an electric mixer, cream together the sugar and butter.
- Add the eggs.
- Cream these three ingredients together on medium speed for about 2 minutes or until fluffy.
- Add the pumpkin and combine well.

- In three batches, add the dry ingredients and mix gently until each batch is just incorporated.
- Scrape the sides between each batch.
- 5.
- Fold the walnuts into the batter and then pour it into the prepared tins.
- Bake side-by-side for about one hour or until an inserted knife comes out clean and the top is golden brown.
- If the top is browning too quickly, cover with foil and continue cooking.
- Leave to cool in tins.
