Triple Chocolate Chip Ice Cream Pie Recipe
- About 20 - 2" chocolate chip cookies, broken up
- 2 tbsp. melted butter
- 1 quart. mint chip softened ice cream
- White from 3 Large eggs
- Healthy pinch of salt
- 7 ounce. marshmallow creme
- 1/2 c. & 2 tbsp. chocolate chips
- Mix crumbs and butter.
- Press in pie plate.
- Refrigeratetill hard.
- Pack ice cream into crust.
- Freeze 1 hour.
- Place oven rack in top position.
- Heat 450 degrees.
- Mix whites and salt till soft peaks form.
- Add in marshmallow and beat till peaks are stiff and shiny.
- Mix in 1/2 c. of chocolate chips.
- Spread over ice cream quickly.
- Sprinkle 2 Tbsp.
- chocolate chips.
- Bake 5 min or possibly till meringue is lightly browned.
- Serve immediately or possibly cover and freeze up to 2 weeks.
