Currant rolls
- 2 cup flour
- 1/2 cup cold cubed shortening
- 3/4 cup cold cubed butter
- 1 tbsp vinegar or lime or lemon juice
- 1/2 cup very cold water...may use more or less
- 1 egg beaten
- 2 tbsp melted butter
- 2 cup good quality currants washed and dried
- 2 tsp ground cinnamon
- 1/4 cup sugar
- in a bowl or food processor combine shortening butter flour lime juice mix adding little water at a time until dough comes together.place on floured surface and pat and roll dough to a rectangle about 10'by 16' long.
- Fold long ends of dough into center and fold in half like a book.
- with smooth end on your left , roll in to another rectangle and fold again.
- turn dough as you did the first time ,and roll and fold a third time.
- place dough in freezer for about 30 mins .
- When ready to use, pre heat oven to 375AF
- combine currants with cinnamon and sugar.
- Roll out pastry to 1/4' thick brush with melted butter sprinkle currant mixture evenly press gently roll up jelly roll style, seal ends and place on tray seam side down.
- brush with egg.
- bake for 45-50 mins.
- until golden brown.
- remove sprinkle a little sugar on top cool then slice diagonally into 1 &1/2 ' pieces place back on tray and return to oven for 5-10 mins.
- cool and enjoy a
