SouthWestern style quinoa stuffed peppers

  1. Preheat oven to 350F.
  2. Cut the tops off your peppers and core them.
  3. Mix the rest of the ingredients together.
  4. Fill each pepper with the mixture.
  5. Bake for 25 to 30 minutes.
  6. Serve immediately.
