Lemon-Tarragon Baked Tilapia

  1. Preheat oven to 400 degrees F.
  2. In a baking dish, add fish stock (or vegetable stock) and set tilapia in a single row.
  3. In a small bowl, add lemon zest, juice and tarragon, stir to mix.
  4. Pour over fish.
  5. Cover baking dish with aluminum foil and bake 68 minutes.
  6. Serve with rice (white, wild, brown).
  7. Enjoy!
