Fish Tacos with Mango Salsa
- 2 cups Mango Salsa
- 2- 1/2 pounds Fresh Cod
- Cajun Seasoning, To Taste (optional)
- 1/2 whole Red Cabbage
- 1 whole Avocado
- 12 whole Whole-wheat Tortillas
- Prepare mango salsa (see my blog or TK recipe box for recipe).
- Preheat oven to 400 degrees F.
- Place fresh cod in a baking dish.
- Lightly season with cajun seasoning (optional).
- Bake for 15 minutes.
- Chop red cabbage and slice avocado.
- Set aside as toppings.
- Warm tortillas over the stove by placing them in a nonstick pan for 30 seconds on each side.
- Divide fish between tortillas, top with cabbage, mango salsa, and avocado!
