Crispy Cheddar Crackers Recipe
- Nonstick spray coating (ex. Pam)
- 3/4 c. flour
- 1/4 c. grnd walnuts
- 1/2 teaspoon paprika
- 1/4 teaspoon onion pwdr
- 3 tbsp. butter, softened
- 1 c. shredded Cheddar cheese (4 ounce.), room temp. (not preshredded cheese)
- 1-2 tbsp. cool water
- Spray baking sheet with nonstick spray coating.
- Set aside.
- In a medium mixing bowl, stir together flour, walnuts, paprika and onion pwdr.
- Cut in butter till mix resembles coarse crumbs.
- Stir in cheese.
- Sprinkle 1 tsp.
- of the water over part of the mix; gently toss with a fork.
- Repeat till all is moistened.
- Form dough into a ball; flatten slightly.
- Roll 1/8 inch thick.
- Cut dough with a 2 inch round cookie cutter, rerolling trimmings.
- Transfer to the prepared baking sheet.
- Bake in a 350 degree oven about 12 min or possibly till golden brown.
- Remove; cold on a wire rack.
- Makes about 55 crackers, about 15 servings.
- For Grnd Walnuts: Place walnut pcs in a blender container or possibly food processor bowl.
- Blend or possibly process till finely grnd.
- (Use the same measure of walnut pcs as you need to grnd walnuts.)
