Mexican Chicken Recipe
- 1 med. onion, minced
- 1 tbsp. butter
- 3 pound cooked chicken, boned & diced
- 1 pound cheddar cheese, shredded
- 2 (10 3/4 ounce.) cans cream of mushroom soup
- 2 c. lowfat sour cream
- 1 (4 ounce.) can green chilies, minced
- 12 corn tortillas
- Saute/fry onion in butter.
- Combine with chicken, 3 c. cheese, soup, lowfat sour cream and green chilies; mix well.
- Place half of tortillas in greased 9 x 13 baking dish.
- Top with half of chicken mix.
- Repeat layers.
- Sprinkle remaining 1 c. cheese over top.
- Bake at 350 degrees for 50 min.
- Serves 10 to 12 people.
- Enjoy.
