Grilled Beef and Vegetable Rolls
- 1 lb. beef prime rib, cut into 12 thin slices
- 12 asparagus spears, 5 to 6 inches long
- 12 carrot strips, 1/2-inch thick, 5 to 6 inches long
- green onion tops
- 1 cup prepared , divided
- Arrange 2 slices each of the beef, with lengths slightly overlapping, to form 6 (6-inch) squares.
- Place 2 asparagus spears and 2 carrot strips along one edge of each square; roll tightly.
- Tie with green onion tops or string.
- Pour 1/2 cup of the dressing over beef rolls; cover.
- Refrigerate 1 hour to marinate.
- Drain; discard dressing.
- Place beef rolls on greased grill over medium coals.
- Grill 10 minutes or to desired doneness, turning once.
- Serve with remaining 1/2 cup dressing as a dipping sauce.
