Potato Pancakes

  1. In a mixing bowl add eggs to grated potato and onion.
  2. Add Matzo meal until pancakes are to desired consistency.
  3. In a hot frying pan heat canola oil.
  4. Drop a soup-spoonful of the mixture into hot canola oil; flatten with back of spoon.
  5. When browned, flip and brown on other side.
  6. Transfer pancakes to paper towels to drain.
  7. Sprinkle with salt.
  8. Keep warm in the oven on a cookie sheet.
  9. Serve with applesauce.
