Cheesecake
- graham cracker crumbs
- 1 lb. small curd cream-style cottage cheese
- 2 (8 oz.) cream cheese, softened
- 1 1/2 c. sugar
- 4 eggs, slightly beaten
- 1/3 c. cornstarch
- 2 Tbsp. lemon juice
- 1 tsp. vanilla
- 1/2 c. margarine, melted
- 1 pt. dairy sour cream
- Grease 1 (9-inch) spring-form pan; dust with graham cracker crumbs.
- Sieve cottage cheese into large mixing bowl.
- Add cream cheese.
- Beat on high speed until blended.
- Then add sugar and eggs.
- Blend on low speed and add starch, lemon and vanilla.
- Add margarine and sour cream.
- Blend on low speed and pour into pan. Bake in preheated oven at 325u0b0 for 1 hour and 10 minutes, or until firm around edges.
- Turn off oven and let cake stand 2 hours. Makes about 12 servings.
