Pickled Green Beans
- 1 lb green beans
- 1 cup cider vinegar
- 2 tablespoons sugar
- 2 teaspoons mixed pickling spices
- 12 teaspoon salt
- 1 garlic clove, chopped
- 12 cup chopped fresh dill
- Trim beans.
- Heat 1 quart of water to boiling, add beans and cook 5 minutes until just tender, but still bright green.
- Drain, reserving 1/2 cup of cooking liquid.
- In a small saucepan, combine vinegar, sugar, spices, salt, garlic and dill.
- Add reserved liquid.
- Stir well.
- Cook over medium heat for 5 minutes.
- Place beans in a 2 quart jar or bowl.
- Pour vinegar mixture over beans, cover, and refrigerate for 24 hours or longer.
