Pickled Green Beans

  1. Trim beans.
  2. Heat 1 quart of water to boiling, add beans and cook 5 minutes until just tender, but still bright green.
  3. Drain, reserving 1/2 cup of cooking liquid.
  4. In a small saucepan, combine vinegar, sugar, spices, salt, garlic and dill.
  5. Add reserved liquid.
  6. Stir well.
  7. Cook over medium heat for 5 minutes.
  8. Place beans in a 2 quart jar or bowl.
  9. Pour vinegar mixture over beans, cover, and refrigerate for 24 hours or longer.
