Pumpkin Fruit Cake
- 1/2 lb (.2 kg) butter
- 1 cup (225 ml) sugar
- 2 eggs
- 1 cup (225 ml) cold mashed pumpkin
- 2 cups (475 ml) flour
- 1 tsp (5 ml) cream of tartar
- 1/2 tsp (2 ml) baking soda
- 1 lb (.5 kg) dried mixed fruit
- Cream butter and sugar, add eggs and beat well.
- Add cold mashed pumpkin, flour sifted with cream of tartar and baking soda.
- Lastly mix in 1 lb (.5 kg) dried mixed fruit.
- Turn into greased pan.
- Bake in slow oven 1 1/2 hrs.
