Mike's Legendary Banana Bread Recipe
- 1 3/4 c. flour
- 1 1/4 teaspoon baking pwdr
- 1/2 teaspoon baking soda
- 2/3 c. sugar
- 1/3 c. butter
- 2 Large eggs
- 1 1/2 tbsp. lowfat milk and 1 teaspoon rum extract Or possibly
- 2 tbsp. lowfat milk
- 2 very ripe bananas (med. to lg. or possibly 3 sm.)
- 3/4 to 1 c. semi-sweet chocolate chips
- Beat sugar and butter together well.
- Add in the Large eggs, lowfat milk and rum extract while blending.
- Add in one banana and gradually beat in about half of the flour.
- Add in the other banana and gradually the rest of the flour.
- Beat till smooth, then mix in chocolate chips as desired.
- Pour batter into a greased loaf pan.
- Bake at 350 degrees for about an hour.
- Check with a toothpick for doneness (if it comes out clean, the bread comes out too cold!)
- Let cold in pan for about 5 - 10 min, turn out and cover with a towel while it cools.
- It tastes better the older it gets (to a point) !
