Sausage Ball Squash Recipe
- 2 med. acorn squash
- Cinnamon to taste
- Salt
- 1 pound bulk pork sausage
- 2 c. sweetened applesauce
- Cut squash in halves lengthwise; remove seeds.
- Bake, cut side down, in shallow baking pan at 350 degrees till almost tender, about 35-40 min.
- Meanwhile, form sausage in small balls; brown slowly about 15 min; drain.
- Add in cinnamon to applesauce, then add in to sausage balls; cover and simmer 15 min.
- Turn squash to cut side up, sprinkle with salt and spread all of the cut area with honey.
- Fill with sausage and applesauce.
- Continue baking till squash is tender, about 20 min.
- Serves 4.
